Banking and borrowing are your friends in this. And you need to own a decent amount of points. For the sake of argument, say you own 300 points (if you don't now, you will eventually, trust me).
We'll assume your use year is June, so in June 2010 you receive 300 points. You bank those right away and don't take a trip between June 2010 and June 2011. In June 2011, you receive another 300 points, so now you have 600 points. Then you borrow 300 points from your June 2012 allotment, and poof, 900 points.
You book your trip. Of course, which trip, when you go, how many people, etc. all affect how many points it takes, but that's how you can do it.

Hi, I'm new to dvc and also to posting. How do people save enough points to go on a Disney Adventure, or Cruise?

There are also a number of people who plan to pay cash for AbD trips & cruises (if they do them at all) and argue it is more economical to use points only at DVC resorts, so some people never do! <At this point I plan to fall into that category.>
But the bank-use-borrow plan is a good method to use your DVC membership in a number of different cases. For example, on some of my smaller contracts I plan to do that and book a 5 or 6 night stay every few years at 11 months, rather than only be able to book two days with just that year's points.

That's entirely a personal perspective. For me, I wanted the extra cash off the points. I get horribly sea sick so I am not overly enthusiastic about potentially spending 6-7 days hurling off the back of the ship. My kids, on the other hand, had they been in the presentation, would have definitely voted for the cruise. My 9-year old is fascinated by the Aquaduck.
Me? I was getting nauseous just watching the video!
I will tell you this, though. I was told by more than one person that Bay Lake Towers will be selling out within the next 4-6 weeks, so if that's where you are considering buying, carpe diem.
