I started to vote wait for all until I read your post. In your situation I would go ahead and book the 5 days and wait list the other 3 days. You'll have a better chance of getting three days on a WL anyway. I think many times rooms open up just after the 7 month mark (because members are switching to other resorts) so you would have a better chance of getting 3 days versus 8 days.

Wait List: Take the days, or wait for all? –

So, what would you do?
I want 8 days at BCV this fall, but only 5 out of the 8 days are available, and not contiguous. (I own at BCV, so am operating in the "11 month window".) So I put myself on the wait list for the entire reservation. I presume when the 7 month window opens I'll probably not get something other than SSR or OKW (no disparagement intended). So instead of booking one of those two options and keeping the BCV wait list as planned, I'm thinking I should re-do the wait list and take the days available now and wait list the remaining days. Worse case at 4 months or so out I could cancel those and book SSR or OKW instead. This should also make it more probably that I'll get the 8 days I want at BCV. Ideally I'd have the alternate booked, and hold the BCV days, but that isn't practical, not to mention I'd end up with a bunch of points in holding.
Is my logic sound? Am I missing a better option?

If at least two of the missing days are not contiguous, you will have a problem waitlisting. You may only have two active waitlists at any one time.
Since your plan at 7 months is to book a back up somewhere else, it's probably best to book what you can now at BCV and waitlist for the rest. Your best chance would be to keep the BCV waitlist going until 31 days prior to arrival. (Points do not go into holding unless you cancel 30 days or less prior to arrival).
I wouldn't keep the waitlist past the 7 month mark if I had to borrow points to make the back up reservation. But if I didn't have to borrow to do that, I'd keep the BCV reservation & waitlist until the 31 day mark or until my banking deadline, whichever arrived first.
